What inspires you?
I love seeing satisfied, sated faces—people genuinely enjoying a wonderful meal. I want my clients to taste the pride I have in serving great food.
If someone wants to hire you for an event, but is not sure where to start, what do you suggest?
I would ask what their 5 favorite dishes are, for starters. I would also want to find out what type of event they're having and what type of ambiance they wish to create. Each dish is customized to complement their event.
Why is food important to you?
Food has become more important to me as I've gotten older. We all eat, but we all don't get to experience great meals. My goal is to bring a unique dining experience regardless of the event—an intimate dinner or a 50th anniversary celebration. I want to bring joy to every experience that I'm able to create, for every person who I'm able to touch with my food.
What is your favorite type of meal to cook?
Funny, my favorite meal is one I believe will create the greatest response. I'm always looking to surprise people with my food and test my boundaries. That's probably why I find myself creating dishes that don't have a specific culinary origin. The one constant is big flavor.
What is your favorite food memory?
My favorite food memory is a dinner party I held in Brooklyn, NY a couple of years ago. Not only did we have live entertainment, but a full house. There were two tables of guests; one was very conservative, while the other table was more lively and raucous. The personality contrasts and the music made it a magical night.
What are your favorite kitchen tools and gadgets?
I like to make the magic happen with my cast-iron pans, knives and a microplane.
What are you favorite restaurants in the NYC area?
Because you want your event to be amazing, you want your chef to produce food that he's proud of, and want your guests to remember your event for all the things that were done well—especially the food.
